Fun with Chocolate, Fruit and Flowers

These cakes were all made on the same day, I use the same cakes with different decorating options. The panels were made from white and dark chocolate. The grapes and strawberries were fresh. The red roses are gumpaste, the tuplips and pink roses are fresh.
The 1 tier cake with grapes and strawberries made it to work and everyone loved it.

Cupcakes, Big and Small

Marble cupcakes with chocolate whipped cream frosting. Each topped with a fondant snowflake brushed with pearl dust for a little sparkle. I made 3 dozen of these at the last second for my husbands co-workers. It was a fight against the snow during the holidays this year, but they turned out great and everyone was more than pleased.
These were done for a tasting, white and marble cakes with raspberry preserves, raspberry mousse and chocolate mousse fillings. They were each topped with buttercream frosting and a fondant flower and leaf. This tasting later turned into the Jungle Cake I made for a 1st birthday.

Red Velvet with whipped cream frosting and a single gumpaste flower. These were designed for a retirement homes afternoon tea party. These bit size cupcakes were accompanied by chocolate dipped strawberries.

Happy 60th Daisy

This was done for my friend Daisy who celebrated her 60th birthday with friends and family. She even had childhood freinds travel from around the US to celbrate with her. The cake was white cake with a lemon mousse on the bottom tier and a lemon curd on the top tier. It is iced in whipped cream frosting. The dasies are gumpaste and the Happy Birthday plaque is chocolate. This was inspired by a cake she had for her 16th birthday. I was so honored to be a part of her special day.

Nicole's 40th Birthday!

My friend Dawn (That Dawn of Dawns Candy and Cake), made this for our friend Nicoles surprise 40th birthday party. The top and bottom tiers are vanilla bean cake with raspberry mousse and the center tier is a triple chocolate cake with whipped chocolate ganache. The entire cake is covered in fondant and topped with a royal icing tiara (courtesy of Christian and Sarah). The cake looked amazing and I hope it tasted great too. I was not able to stay at the party long enough to try this creation, so I hope all the other party goers enjoyed it!

Bright and Colorful

My husbands brother Travis and his wife Shana got married on Maui October 2007. When they came back they celebrated with a reception for family and friends. I was honored to make their wedding cake. I was given the instruction of flavor and bright colors and the rest was left up to me. I was told they were having fresh orchids flown in to be used for decoration. I dont remember the flavors now, but I do know they were a 10", 8" and 2, 6" cakes. The 6" yellow cake was just for the bride and groom and was chocolate cake with chocolate mousse. I was so happy be able to be a part of their special celebration!

Carrot Cakes...MMM Good!

Welcome to the famous fish cake. When I started decorating cakes as a hobby my mentor/co-worker (aka Old Man Ron) was going to retire. I thought a cake in the shape of a fish would be appropriate as we repaired the electronics to find the fish. He requested carrot cake and I learned a great lesson with this cake...dont try to carve a cake with nuts and raisins...what a mess. Also quite an ambitious project for one of my first "real" cakes that made it out of my kitchen for people to see and eat. The cake was carved from a 12" x2" square and covered in fondant. The scales are from a spoon and the fondant was painted with vodka and luster dust. Everyone was very impressed.
So my mom really loves carrot cake, but since I dont get orders for it often it, she misses out. The last time I received an order for carrot cake I had an oops moment. The cake didnt bake right so I had to make a new one and in order to get a full 8" x 3" cake I knew I would need a double batch so I also made this 6" cake for a rainy day. Recently my mom got together with a group of her girlfriends so I thought I would make a cute cake for their afternoon lunch. The ladies were so impressed and my mom finally got carrot cake from her daughter. The cake was filled with homemade cream cheese icing and then frosted in a combination of cream cheese and buttercream. The flowers are gumpaste and the vines and borders are buttercream

This was ordered as a "just because I liked your cakes" occasion. It is a carrot cake with cream cheese filling and iced in buttercream. The "sand" is raw sugar and graham crackers, the palm trees are pretzels and fondant and the "Welcome Back" plaque is made of fondant.
